just last week, my sister made 24 cupcakes with her friend and it is not your typical cupcakes with frosting but the cupcake is presented exactly as cookie monster. she brought home 10 of them and i managed to take 3 of it.

the cupcake is vanilla based and it is topped with blue icing sugars, shredded coconut and cookie. the icing sugar is relatively sweet but that is fine as the cupcake itself is not as sweet. sometimes, you need something to sweeten your life, don’t you? the cookie is made up of chocolate chip and the eyes of the cookie monster consist of a pair of white chocolate and chocolate chip. so much chocolate loving to spread around.

here’s her recipe for the cupcakes:

1) 1 box of Betty Crocker Super Moist Cake Mix French Vanilla
2) 1 1/4 cups of water
3) 1/4 stick of organic President’s Choice butter (I substituted the original 1/3 cup Vegetable Oil in the Betty Crocker Recipe because butter (70% fat) has less fat than vegetable oil (100% fat))
4) 3 eggs
5) 24 cupcake liners
6) 24 small soft Chip Ahoy cookies for our Cookie Monsters’ mouths
7) 48 white chocolate chips
8) 48 milk chocolate chips

she only spent a total of CAN$12 for the entire package of ingredients and she even has excess for her next baking session.

baking instructions are as follows:

1) firstly, melt the butter.
2) next, beat the eggs, water, cake mix, melted butter and oil in a large bowl.
3) after beating the mixes, you are able to pour the mix on the cupcake pan.
as a rule of thumb for baking, always remember to fill 3/4 of the pan.
my sister baked 12 cupcakes at one time and at each time, she heat the oven at 350 degrees for 15-18 minutes.
cupcakes are so easy to bake, don’t you think ?
well, here comes the fun part - THE ICING SUGAR THAT MADE THE CUPCAKE LOOK EXACTLY LIKE THE COOKIE MONSTER !
for the icing, here are the ingredients:
1) 3 cups icing sugar
2) 1/4 cup butter
3) 5 tbsp Silk soy milk (You can use any milk. It doesn’t really matter)
4) 1/2 tbsp Vanilla essence
5) Blue and red food colouring

instructions:
1) for icing sugar, it is always best to use an electronic beater to properly mix the vanilla essence, icing sugar & melted butter.
2) while beating the mix, 5 tablespoons of soy milk should be added into the bowl.
3) when the icing sugar starts to form, the blue food coloring should be added and the red food coloring is needed in order to obtain the blue coloring of the icing sugar as seen in the pictures.
my sister’s ratio of red:blue dye is as follows: 1:4.
my sister is so adorable that she even added shredded coconut to make the fur of the cookie monster so as to look more realistic.
her ingredients are as follows:
1) 100g sweetened shredded coconut
2) Blue food colouring
3) Small transparent plastic bag
instructions:
mix just the blue food coloring and the shredded coconut into a plastic bag.

P/S: Always remember it takes a NO-BRAINER (just follow the recipe instructions and you are good to go. i know a few people who can’t even get their desired products via recipes though) to bake but not everyone is able to use their creative juices to customized such awesome cakes & pastries. My sister and a few other people I know of are exceptions!
