I have been wanting to wear a hanbok since I stepped foot in Korea last year. However, my BFF was not interested in such practices so I decided to sign up for it with a friend I made in Vancouver. She was back at Korea at that time and after much research, I chose Kimchi Academy House since they had the best of both worlds – kimchi class and hanbok photoshoot.

Even without trying out the hanbok and just by looking at all the props and costumes, I was already excited! We were first served with citron honey tea / 유자차 while waiting for the previous kimchi class to finish.

There are 5 classes in a day FYI:

1st class was from 10am-11am

2nd class was from 12pm-1pm

3rd class was from 2pm-3pm

4th class was from 4pm-5pm

5th class was from 6pm-7pm

We signed up for the second class as we were staying in a jimjilbang the previous day and wanted to have lunch before coming over. The class was 30,000 won, which comprises of both trying out hanbok and kimchi class.

As we were waiting for the previous class to end, Stella and I picked out a costume to try (as depicted in the first and second pictures). When the instructor was done with that class, she told us to change and picked a hanbok for us each. The instructor is generally nice but I found her too authoritative making us pose cute faces and such. Stella was wearing a hanbok that was meant for the queen while my hanbok was more for a normal woman with no status. We took plenty of photos but these are just a few that I decided to post in the blog as I do not usually post my own pictures in my food blog.

 B. Kimchi Class

After we were done with the multiple shots of posing with our hanbok, we had the kimchi class next. I could not take a lot of pictures as the instructor asked me to keep my camera and only wanted us to pose when she wanted to. Starting from scratch, what you need to make kimchi are the following ingredients:

  • - Chives cut in 3cm length / 향신료
  • - 1/2 Chinese cabbage / 배추
  • - Spring Onion cut in 3cm length / 파
  • - 3″ thick Radish / 무

As we only had one hour to prepare kimchi, our cabbage was already salted beforehand. However, if you are making kimchi on your own, you have to place the cabbage in a pot of 15% salted water for 6-8 hours in the summer and 8-12 hours in the winter. After which, there is no need to squeeze water from the cabbage but instead, place it in a coriander to drain for 2 hours.

As for the seasonings that was taken in the first picture, what we needed are:

  •  - Sugar
  • - Sesame
  • - Fish Sauce
  • - Boiled Sticky Rice Powder
  • - Salted Shrimps
  • - Mixed Garlic Ginger
  • - Red Pepper Powder

For the seasonings, you have to add 3 teaspoons of red pepper powder and 1 teaspoon of the other seasonings and mix them with your bare heads.

Next, rub the seasonings against the green part of the leaf and continuously do it for the other leaves.

After putting on the seasoning, you have to ferment the kimchi by placing it in the refrigerator for 3-4 days.

Look how simple it is making kimchi instead of purchasing it from the store!
