CLEAN EATING #21- MOTHER’S DAY OVERNIGHT OATS

Happy mother’s day to all beloved mothers who have made so much sacrifice for their children. I have seen so many benevolent mothers in UCLA hospital, who has always been there during their children’s transplant journey. Despite being in and out of the hospital all the time, they never give up. Here is a mother’s day overnight oats recipe treat for those who have mothers that are health-conscious!!

MAIN COURSE

Firstly, I mixed the following and leave it in the refrigerator overnight:

- 1.5 cup of almond milk

- 1/2 cup of rolled oats

- 2 tablespoons of greek yogurt

- 1 tablespoon of chia seeds

- 1 tablespoon of peanut butter

- 1 tablespoon of sunflower seeds

- 1/2 tablespoon of cacao powder

When the sun rises, I topped the mixture with the following:

- about 4-5 raspberries

- about 4-5 blackberries

- 1/2 tablespoon of goji berries

- a small handful of shredded coconut

- 1 weetabix

Lastly, I decorated the jar and side to make it look presentable for a mother’s day theme!

I have listed the ingredients for this fruit-infused water the other day but just a reminder that another thing you can leave overnight as well is your fruit-infused water. Just sliced 1/2 lemon, 1/4 cucumber, water to fill and 1 stalk of mint leaves and you are good to go for your water intake the next day! Just keep refilling the jar with water will do!!
